Wood has been an exceptional choice for cutting surfaces since ancient times. It's widely available, easy to work with, and gentle on knives. Cutting boards, charcuterie boards, and serving trays come in various materials like plastic, glass, steel, and marble—each easy to clean. However, unlike wood, which is softer and less damaging to blades, other materials can be harsh on your kitchen tools. Wood boards may show some wear over time, but with proper care, they can self-repair and maintain their appearance.

Softwood Or Hardwood Cutting Boards?

Not all woods are created equal. Choosing the right type is essential for preserving your knives and keeping your kitchen clean. While both softwoods and hardwoods have their uses, hardwoods are generally more durable and resistant to damage. Maple, walnut, cherry, beech, and ash are excellent choices due to their tight grain and natural antibacterial properties. Woodworking generates a lot of leftover pieces, often too small for furniture. Instead of discarding them, they can be used to make cutting boards, charcuterie boards, and serving trays. End grain boards are made by joining the ends of wood pieces together, offering better durability and resistance to warping. Edge grain boards, made by cutting along the length, are more affordable and commonly used in kitchens.

Butterfly joints, also known as dovetail or Nakashima joints, are making a comeback in woodworking. These traditional joints not only add aesthetic value but also strengthen the structure of wooden items like tables and picture frames. They’re now being used in custom cutting boards, creating unique and beautiful kitchen tools.

How to clean a wooden cutting board?

Wooden cutting boards are practical and long-lasting. With the right care, they can last a lifetime. Avoid putting them in the dishwasher, as the heat and water can warp the wood. Instead, wash with mild soap and warm water, then dry immediately. Don’t use bleach, as it can dry out the wood. If there are stains or odors, try vinegar or lemon juice to neutralize them.

Oiling your cutting board is essential for maintenance. Use food-grade mineral oil a few times a year to keep the wood from drying out. Avoid using regular mineral oil meant for machines, as it’s not safe for food contact. Apply the oil with a cloth or brush, not your hands, to prevent splinters. Never use vegetable or olive oil, as they can cause bad smells and spoil the board.
